Abstract(s)
Ao longo da segunda metade do século XVIII e na primeira metade do século XIX, Valongo foi marcada pela proliferação de padarias, que rapidamente se tornaram as principais abastecedoras da cidade do Porto de pão de trigo. Neste período, e até à primeira metade do século XX, a indústria da panificação tornou-se, desta forma, uma atividade económica importante para o desenvolvimento socioeconómico da região. A modernização trouxe consigo um certo declínio desta atividade, embora a produção e venda de regueifa e biscoitos continuasse a ser feita, essencialmente em contexto local. Desta forma, a presente dissertação procura fazer uma análise geral da indústria da panificação em Valongo, desde finais do século XVI até à atualidade, enquanto atividade económica importante para o desenvolvimento da região, bem como perceber a importância que assume enquanto património cultural, material e imaterial, analisando o modo como é preservada e promovida pela própria autarquia. Além do mais, busca salvaguardar e preservar memórias relacionadas com este ofício, como forte elo entre o passado e o presente, na tentativa de (re)construir uma memória coletiva.
During the second half of the 18th century and the first half of the 19th century, Valongo was marked by the proliferation of bakeries, which quickly became the main suppliers of wheat bread in the city of Porto. In this period, and until the first half of the 20th century, the bakery industry thus became an important economic activity for the socio-economic development of the region. Modernization brought with it a certain decline in this activity, although the production and sale of regueifa and cookies continued to be carried out, essentially in a local context. In this way, this dissertation seeks to make a general analysis of the bakery industry in Valongo, since the end of the 16th century until the present, as an important economic activity for the development of the region, as well as to understand the importance it assumes as a cultural, material and immaterial heritage, analyzing the way in which it is preserved and promoted by the municipality itself. Furthermore, it seeks to safeguard and preserve the memories related to this craft, as a strong link between the past and the present, in an attempt to (re)build a collective memory.
