Kiwi has gained increased interest due to its nutritional properties and scientific research has showed notable health benefits. The main objective is to study the skin and bagasse of the species Actinidia chinensis, to evaluate its potential as a source of nutrients and compounds, through nutritional characterization, determination of compounds or group of compounds of greatest interest, and optimization thereof with Heat-assisted extraction (HAE) and Microwave-assisted extraction (MAE) extraction techniques through Response surface model. Results showed that regarding nutritional composition, the carbohydrate group was the most representative one, followed by proteins and, lipids. Phenolic compounds (PC) stand out as the most significant secondary metabolites in terms of concentration and distribution. The most significant PC compounds in peel were dihydroferulic acid (20.8 mg/g E), quinic acid (6.8 mg/g E), epigallocatechin (3.40 mg/g E) and dihydroisorhamnetin (2.24 mg/g E). HAE proved to be superior, with yields significantly higher than those obtained via MAE. The results showed that the skin and bagasse of Actinidia chinensis have a potential pharmaceutical, cosmetic or food interest due to their CF composition.
