A dissertação foi realizada na Symington Family Estates, Vinhos S.A e enquadra-se no mestrado de engenharia química no ramo da qualidade do Instituto Superior de Engenharia do Porto. O tema deste projeto teve como objetivo estudar qual o impacto de defeitos de rolhas no desempenho da vedação nas garrafas de vinho de consumo tinto e do Porto. Para isso foram analisadas 50 rolhas, que foram divididas em 2 fases. A primeira foi realizada no ano de 2019 e foram analisadas 10 rolhas com defeitos visuais (anos secos), e a segunda foi realizado no ano de 2022 e foram analisadas 40 rolhas, em que 10 tinham um problema no tratamento de superfície e as restantes tinham defeitos visuais. O objetivo foi avaliar o impacto da utilização de rolhas com problemas no tratamento de superfície e defeitos visuais na estanquicidade de uma garrafa de vinho e verificar se ocorre progressão capilar. Foram analisados parâmetros importantes para este estudo tais como, humidade, pressão interna e forças de extração. Realizou-se uma análise ao vinho para verificar se os valores iniciais de alguns parâmetros tinham diferença estatística significativa, quando comparados com os valores após o engarrafamento com rolhas com defeitos. Por último realizou-se um simulador de anomalias, onde se tem em consideração alguns parâmetros que possam levar a acontecer progressão capilar (rolha, garrafa, volume, temperaturas e câmara de expansão). Das 50 rolhas analisadas, em 20 delas ocorreu progressão capilar do vinho, destas só 2 é que tiveram progressão superior a 50 % (valor máximo aceitável), sendo que 1 delas comprometeu a vedação da garrafa visto que ocorreu fuga de vinho.
The dissertation was completed at Symington Family Estates, Vinhos S.A as part of the master's degree in chemical engineering, quality, at the Instituto Superior de Engenharia do Porto. This project's goal was to investigate the effect of cork defects on the sealing performance of consumer and port wine bottles. 50 corks were analyzed for this, which were divided into two phases. The first was performed in 2019 and analyzed 10 stoppers with visual defects (dry years), and the second was performed in 2022 and analyzed 40 stoppers, 10 of which had a problem with the surface treatment and the rest had visual defects. The goal was to determine whether capillary progression occurs when using stoppers with surface treatment issues and visual defects on the watertightness of a bottle of wine. Humidity, internal pressure, and extraction forces were all examined as important parameters for this study. An analysis was performed on the wine to determine whether the initial values of some parameters differed statistically from the values after bottling with defective corks. Finally, an anomaly simulator was run, with some parameters that could lead to capillary progression taken into account (cork, bottle, volume, temperatures and headspace). Of the 50 corks examined, 20 had capillary progression of the wine, with only two having a progression of more than 50% (maximum acceptable value), and one compromising the bottle's sealing due to a leak of wine.
