There is a wide range of possible applications for diferente types of algae, which has led to a notable increase in production in recente years. This production generates a significant amount of raw material that can be recycled to obtain chemicals of interest. The main objectives of this work are to evaluate their potential use as a source of nutrientes and compounds, to characterize the nutritional and phytochemical profiles of two species of Brown algae, Pelvetia canaliculata and Fucus vesiculosus, and to optimize the extration of bioactive compounds using Heat Assisted Extraction (HAE) and Pressurized Liquid Extraction (PLE) techniques. The research consisted of: (1) Nutritional characterization through analysis of protein, lipid and mineral contente; (2) Phytochemical characterization identifying bioactive compounds using techniques such as HPLC-MS/MS; and (3) Optimization of extraction conditions for maximum yield of bioactive compounds using Response Surface Methodology (RSM). From a nutritional point of view, the results show that botth algae are viable candidates for nutritional supplements and functional foods. The bioactive compounds (tannins, bromophenols and phenolic acids) showed potential uses for natural health products and pharmaceuticals. The optimized extraction techniques effectively maximized the yield of valuable bioactive compounds. In view of the results obtained, i tis concluded that these algae are potencially useful for the development of foods, cosmetics and food suplements.por
