Em Portugal e na União Europeia (EU), os laboratórios acreditados são uma peça fundamental para garantir a segurança e qualidade alimentar, uma vez que conferem confiabilidade dos resultados de análises realizados em alimentos, assegurando a conformidade com padrões nacionais e internacionais. A acreditação de laboratórios é baseada na norma ISO/IEC 17025:2017, que especifica os requisitos gerais para a competência de laboratórios de ensaio e calibração. Um dos requisitos impostos pela ISO/IEC 17025:2017 é a realização periódica de auditorias internas, que tem como objetivo verificar se os métodos realizados no laboratório
continuam a ser executados em conformidade com o sistema de gestão implementado e com os requisitos do mesmo. O presente estágio curricular foi realizado nas instalações da Silliker Portugal, S.A., pertencentes ao grupo Mérieux NutriSciences, e teve a duração de quatros meses. Este teve como principal objetivo o acompanhamento e realização de auditorias técnicas a métodos analíticos realizados no laboratório de química, acreditados pela ISO/IEC 17025:2017. Foram realizadas quatro auditorias técnicas aos seguintes métodos de ensaio: → Determinação do resíduo seco em leites e resíduo seco isento de matéria gorda;
→ Acidez total em manteigas; → Determinação do teor de azoto e cálculo do teor de proteína bruta;
→ Determinação de fósforo em carnes, produtos cárneos e derivados. Foram encontradas, ao longo das quatros auditorias técnicas, quinze não conformidades que foram estudadas e agrupadas segundo os requisitos da ISO/IEC 17025:2017. Conclui-se que o requisito da norma onde foram encontradas mais não conformidades, e que corresponde a 67% foi no requisito - Registos técnicos.
In Portugal and the EU (European Union), accredited laboratories play a fundamental role in ensuring food safety and quality, as they provide reliability for the results of analyses conducted on food, ensuring compliance with national and international standards. Laboratory accreditation is based on the ISO/IEC 1725:2017 standard, which specifies general requirements for the competence of testing and calibration laboratories. One of the requirements imposed by ISO/IEC 17025:2017 is the periodic performance of internal audits, which aim to verify the methods conducted in the laboratory continue to be carried out in accordance with the implemented management system and the requirements of the standard. The curricular internship was carried out at the facilities of Silliker Portugal, S.A., part of the Mérieux NutriSciences group, and lasted four months. Its main objective was monitor and conduct technical audits of analytical methods performed in the chemistry laboratory, accredited by ISO/IEC 17025:2017. Four technical audits were conducted on the following testing methods: → Determination of dry residue in milk and fat-free dry residue; → Total acidity in butter; → Determination of nitrogen content and calculation of crude protein content; → Determination of phosphorus in meat, meat products, and derivatives. Throughout the four technical audits, fifteen non-conformities were found, which were studied and grouped according to the requirement of ISO/IEC 17025:2017. It was concluded that the requirement of the standard where the most non-conformities were found, corresponding to 67%, was requirement – Technical records.
