O Caminho de Santiago em Portugal esta em pleno crescimento, tendo despertado o interesse de agentes públicos e privados associados a atividade turística, relativamente a figura do peregrino. Há cada vez mais peregrinos a caminhar em Portugal, principalmente com partida na cidade do Porto, rumo a Santiago de Compostela. Esta população e muito diversa em termos de nacionalidades e de culturas. Apesar desta
heterogeneidade, no momento de peregrinação as rotinas diarias dos peregrinos são semelhantes, mesmo tendo em conta que varios estudos descrevem diversas motivações para fazer o Caminho de Santiago. (Nadais, 2010, p. 8)
A finalidade deste estudo e, a partir do consumo alimentar, poder entender o modo como os peregrinos atuam no Caminho de Santiago e assim ser possivel melhorar o apoio a rota. Foi elaborado um inquérito para a recolha de dados. Os resultados do inquérito sugerem que, relativamente ao consumo alimentar, o hospitaleiro e a figura que mais influência tem nas decisões de consumo do peregrino; que os peregrinos escolhem espaços próximos do albergue e do Caminho de Santiago para realizar as suas refeições;
e que os peregrinos procuram locais que tenham incluido na sua oferta gastronómica alguns produtos típicos locais.
The Saint James Way in Portugal is in full grovvth. This fact has aroused the interest of private and public tourism players. There are more and more pilgrims in Portugal, mainly departing from Porto, towards Santiago de Compostela. This population is full of nationalities and is composed of a diversity of cultures. During the pilgrirnage, almost all pilgrims have a common daily routine, but between them exist a variety of motivations to do The Saint James Way. (Nadais, 2010, p. 8) The aim of this study is to understand the Way hovv pilgrims are acting during the Saint James Way. This information is based on the food consumption patterns Which aims to improve the pilgrims support on this route. A survey Was designed to collect a database. Results suggest that the host of the accommodation place is the biggest influencer of the pilgrim consumption decisions; pilgrims are choosing places to eat near of the Saint James Way or near of the final local accommodation place; pilgrims are looking for places which offer typical local food.
