Abstract(s)
A Cadeia de Abastecimento a temperatura controlada em Portugal encontra-se ao nível dos mercados mais desenvolvidos, que procura, através de inovações tecnológicas e soluções flexíveis, seguras e rastreáveis, dar resposta ao ritmo de crescimento que caracteriza o mercado da logística de frio. Assim sendo, com uma dinâmica de mercado em crescimento e cada vez mais exigente, é fundamental que as empresas do setor adotem estratégias que visem aumentar a eficiência das suas operações, promovam um aumento do nível de serviço prestado ao cliente e a diminuição dos seus custos operacionais.
A necessidade da diminuição dos custos operacionais não deve ter qualquer impacto na qualidade, sendo expectável que o foco se concentre na melhoria contínua das operações logísticas internas. As operações logísticas de Receção, Conferência, Arrumação, Preparação e Picking são as operações alvo de estudo na presente dissertação.
Considerando as necessidades e exigências particulares que caracterizam as operações neste setor, nomeadamente em matéria de Higiene e Segurança Alimentar, a dissertação fornece um estudo em torno das especificidades da Logística de Frio, Rastreabilidade, as Tecnologias da Informação e a sua Integração da Cadeia de Abastecimento, Operações de Armazém a temperatura controlada, Filosofia Lean e Metodologia Kaizen. Nesta dissertação aplicou-se a metodologia investigação-ação na empresa STEF, líder europeu em serviços de logística e transporte sob temperatura controlada, na delegação da STEF Porto. Através da caracterização das operações logísticas em análise, foram identificadas dimensões com potencialidades de melhoria de eficiência e desenvolvido um conjunto de sugestões de melhoria. Foram construídos e aplicados dois modelos matemáticos com vista à minimização dos custos do operador logístico com a operação de picking e armazenagem onde foi possível obter uma poupança de cerca de 30,9% face ao cenário inicial.
The temperature-controlled supply chain in Portugal is on a par with the most developed markets, which seeks, through technological innovations and flexible, safe and traceable solutions, to respond to the pace of growth that characterizes the cold logistics market. Therefore, with a growing and increasingly demanding market dynamics, it is essential that companies in the sector adopt strategies aimed at increasing the efficiency of their operations, promoting an increase in the level of service provided to the customer and a decrease in their operating costs. The need to decrease operational costs should not have any impact on quality, and it is expected that the focus will be on the continuous improvement of internal logistics operations. The operations of Reception, Conferencing, Storage, Preparation and Picking are target operations studied in this dissertation. Considering the particular needs and demands that characterize the operations in this sector, namely regarding Food Hygiene and Safety, the dissertation provides a study around the specificities of Cold Logistics, Traceability, Information Technology and its Integration in the Supply Chain, Controlled Temperature Warehouse Operations, Lean Philosophy and Kaizen Methodology. In this dissertation, the action-research methodology was applied to STEF company, European leader in temperature-controlled logistics and transport services, in the STEF Porto delegation. Through the characterization of the logistics operations under analysis, dimensions with potential for efficiency improvement were identified and a set of improvement suggestions were developed. Two mathematical models were built and applied in order to minimize the costs of the logistics operator with the operation of picking and storage where it was possible to obtain savings of about 30,9% compared to the initial scenario.
