Abstract(s)
O setor do turismo está em constante evolução e mudança e o subsetor da
restauração é um dos setores onde o impacto desta alteração/mudança é mais
significativo. O mercado é atualmente muito diversificado, difícil e muito trabalhoso,
originando muitos e novos desafios para os gestores da restauração. Neste sentido, surge
a ideia de estudar qual o impacto do turismo no setor da restauração da cidade do Porto.
Compreender a situação atual do subsetor da restauração, bem como as mudanças e as
tendências deste setor foram importantes fontes de motivação para a elaboração deste
trabalho. O estudo do turismo e da restauração da cidade do Porto constitui o tema
central deste trabalho, na qual pretendemos compreender melhor as alterações, as
adaptações e o crescimento dos restaurantes, face à evolução do turismo na cidade do
Porto.
Para responder às questões deste estudo recorreu-se à elaboração de um estudo
quantitativo, utilizando uma amostra por conveniência, no sentido de testar e responder
a todas as hipóteses elaboradas.
Em suma, este trabalho fornece importantes orientações e informações para
futuras investigações e estudos relacionados com a restauração e o turismo na cidade do
Porto, na qual poderão ser de maior utilidade para estes setores, nomeadamente na
adaptação do setor da restauração às necessidades criadas pelo desenvolvimento do
turismo na cidade.
The tourism is constantly evolving and changing, and the restaurant industry is one of those that the impact of this change is most significant. The market is currently very diverse, difficult, and very laborious, creating many new challenges for restaurant managers. In this sense, the idea of studying the impact of tourism in the restaurant sector of the city of Porto arises. Understanding the actual restaurant industry situation, as well as the new trends emerging was the motivation for the elaboration of this work. The study of tourism and the restaurant of the city of the Porto is the central theme of this work, in which we want to better understand the changes, the adaptations and the growth of restaurants, in view of the evolution of tourism in the city of Porto. In order to obtain answers, a quantitative study was used, using a sample for convenience to test and answer all the hypotheses elaborated. Finally, this work brings important information that can be used for future studies related to restaurant industry and tourism in the city of Porto, in which they may be of greater use to these sectors, namely in adapting the restaurant sector to the needs created by development of tourism in the city.
